Typical processing: Picking, withering, twisting, oxidizing, drying
General
It‘s a common misconception that black teas are bitter and strong. This is probably due to the fact that most black teas available in the oxidental world are from the stronger and more astringent Assam varietal from India, Sri Lanka or Kenya. However, Chinese black teas typically don‘t have any bitterness to them. In fact their most important taste standard is pure sweetness. Due to their fully oxidized nature, black teas actually have the lowest amount in theine (caffeine).
