Yellow Tea - Complex, Fragrant & Fresh
Processing
Yellow tea is a sophisticatedly processed tea.
Typical processing: Picking, "Kill-Green" (frying), twisting, "annealing yellow" (slight oxidation), drying (typically 4 subsequent steps)
General
Yellow teas are a very rare kind of tea, which production method has nearly been lost during the breakdown of the Chinese empire and the troublesome beginning of the 20th century in China. Luckily its locals value it highly for its health benefits and thus managed to conserve its production in some places.
Yellow tea is just between white tea and green tea in its nature, as it is very fresh and green like a green tea, but at the same time very slightly oxidized like a white tea, which poses the main difference to green tea.
Health Benefits & Traditional Chinese Medicine Nature
Yellow teas are "cold" in TCM (Traditional Chinese Medicine), however they are not as "cold" as green teas.
They have good digestive properties. Due to their "cold" TCM nature and fresh flavor, they have very good cooling effects and are perfect for drinking during summer and high temperatures. As yellow teas are slightly oxidized, they have a slightly lower theine content than green teas, but are still very stimulating. They thus might also be a good alternative for people that cannot bear the very "cold" TCM nature and high theine levels of green teas.
